Red wine known and appreciated all over the world for its high body, with a ruby red color tending to garnet when aged. With an intense and elegant aroma, structured and decisive wine with a bitter, soft, velvety and very persistent flavor. This wine is born from the manual selection of the best grapes from historic vineyards with a singular exposure and composition of the soil, capable of giving unique organoleptic notes.
Obtained from the pressing in different percentages of Corvina, Corvinone, Rondinella grapes and a small percentage of other grapes admitted being regulated, picked from vines of the hilly area of Valpolicella Classica.
VARIETY: Corvina, Corvinone, Rondinella and other grapes admitted being regulated. Vineyards grown in the Municipality of Fumane, in the heart of the Valpolicella Classica
WITHERING: Withering of the grapes in ploteaux, in the appropriate drying room, until the winter period, losing about 40% of their weight
AGING: Maturation of about 5 years in barriques and large oak barrels, followed by an aging of about 6 months in the bottle
ALCOHOL CONTENT: 15% vol. minimum and more depending on the vintage
PAIRING: This wine superlatively accompanies game dishes, spit-roasted meats, roasts, braised meats and aged cheeses
SERVICE: It is advisable to uncork at least 2-3 hours before and to serve it at a temperature of 18° C
